This balsamic mozzarella chicken bake is sure to wow your family and friends. You can easily whip up this meal in one pot for easy cleanup!
This recipe is something that I whipped up in a pinch when we took the chicken out to thaw and I forgot to put it in the slow cooker! I knew we had some form of canned tomato and mozzarella in the fridge. I almost made chicken parmesan, but decided to whip up something new instead!

How to prepare balsamic mozzarella chicken bake
Start by setting your oven to 350 degrees F and let it preheat.
While your oven is heating add 1/2 a cup of butter to your dutch oven over medium heat on your stovetop.
Place the chicken in the melted butter and add in salt, pepper, garlic salt, and dried herbs.
After 2 minutes add tomato paste, white wine vinegar, and soy sauce. Move the chicken around to coat on both sides with tomato paste and soy sauce and let cook for an additional 3-5 minutes.
Close the lid and put it in the oven for 30-45 minutes.
Take out the oven and place mozzarella blobs and fresh tomatoes on top of the chicken. Return back into the oven for an additional 10 minutes.
Once cooked add a couple of springs of fresh basil and enjoy your tasty balsamic mozzarella chicken bake.

Notes
Cook in a dutch oven or deep casserole dish. If you are using a casserole dish you will have to use a stovetop safe pan to cook ingredients.
