The roasted ranch potatoes are a perfect weekend side. Serve them at your backyard BBQ in the summer or pair it with a chicken for a warm comfort meal in the colder months.

This recipe takes next to no prep at all and includes only 4 ingredients that you probably already have in your fridge and pantry!

I used Lighthouse Avocado Ranch Dressing, but you can use whatever ranch dressing you have in your fridge!

Roasted Ranch Potatoes

Roasted Ranch Potates with Avocado Ranch Dressing

  • casserole dish
  • 5 lbs Mini Potaotes
  • 1.5 cups Avocado Ranch Dressing
  • Pinch Salt and Pepper
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Salt
  1. Heat oven to 350 degrees F.

  2. Mix together potatoes and all ingredients in a bowl. Ensure potatoes are covered in mixture.

  3. Transfer potatoes to a casserole dish and cover with aluminium foil.

  4. Bake in oven for 1.5 – 2 hours or until potatoes are soft.

  5. Bake for another 15 – 20 minutes without aluminium foil to crisp.

  6. Garnish with fresh chives or parsley.
