Combine crust ingredients in a medium bowl until it reflects a wet sand texture.
In a prepped springform pan press the crust mixture on the bottom of the pan firming it down to form a solid crust.
Place the pan in the fridge while you continue to the cream cheese filling.
In a separate bowl, combine cream cheese mixture ingredients in a stand mixer until it forms a fluffy texture. Add in the vanilla extract and pieces of softened cream cheese slowly.
In an even layer, fold the creamy filling over the crust spreading the cream cheese mixture on top of the graham cracker crust with a rubber spatula.
Place in fridge overnight to harden.
Just before serving, pop hardens crust and filling from the pan and serve on a cake stand or plate.
Drizzle a can of cherry pie filling over the cream cheese layer.
