Ingredients

  • 5-6 large fresh yellow peaches sliced
  • ½ cup salted butter melted
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup flour
  • 1 tsp baking powder
  • A pinch of salt
  • Whipped cream or vanilla ice cream for serving

Instructions

  1. Preheat Oven: Heat your oven to 350°F (175°C).
  2. Prepare Peaches: Slice 5–6 large fresh yellow peaches into 1/4 inch slices.
  3. Butter the Pan: Spread a small amount of melted butter on the bottom of a 9×13 inch baking pan.
  4. Add Peaches: Place the peach slices evenly in the buttered pan.
  5. Make the Batter: In a bowl, mix together 1/2 cup of melted butter, 1 cup of sugar, and 1 teaspoon of vanilla. Add 1 cup of flour, 1 teaspoon of baking powder, and a pinch of salt to the mixture. Stir until the mixture forms a cookie-dough-like batter.
  6. Top the Peaches: Drop spoonfuls of the batter over the peaches. Spread the batter lightly with a spoon or your fingers. It doesn’t need to be perfect.
  7. Bake the Cobbler: Place the pan in the oven and bake for 30 minutes, until the edges are bubbly and the top is golden.
  8. Let it Stand: Allow the cobbler to sit for 20-30 minutes after baking for a thicker, saucy peach base.
  9. Serve: Scoop the cobbler into bowls and serve warm with whipped cream or vanilla ice cream

Notes

  • Use ripe, fresh yellow peaches for the best flavor. If peaches are out of season, you can use frozen or canned peaches (drained).
  • If you prefer, you can peel the peaches before slicing. To easily peel peaches, blanch them in boiling water for about 30 seconds, then transfer them to an ice bath. The skins should slip off easily.
  • Use good quality salted butter for a richer taste. Unsalted butter can be used if you prefer, just add an extra pinch of salt to the batter.
  • Don’t worry about spreading the batter evenly. It’s okay if some peaches peek through. The uneven topping will create a deliciously rustic texture.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for a perfect contrast of flavors and temperatures.
