Homemade Pineapple Fruit Roll Ups

Ingredients

  • 1 Ripe pineapple
  • Optional Sweetener of your choice (sugar, honey, maple syrup, etc.), to taste to taste
  • Optional Lemon juice to prevent browning and add tartness

Instructions

  1. Prepare the Pineapple: Peel, core, and chop the fresh pineapple into chunks. If you're using a sweetener or lemon juice, prepare those as well.
  2. Puree the Pineapple: Place the pineapple chunks into a blender or food processor. Add sweetener and lemon juice if using. Blend until you achieve a smooth puree.
  3. Strain (Optional): For a smoother leather, strain the puree through a fine mesh sieve to remove any fibrous pieces.
  4. Prepare for Oven Drying: Preheat your oven to the lowest setting, usually between 140°F (60°C) to 170°F (77°C).  Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  5. Prepare for Dehydrator Drying: If you are using a food dehydrator, follow the manufacturer's instructions for fruit leather, usually 135°F. There is no need to line the dehydrator sheets, but you can line the sheets with plastic wrap for easy removal. Dehydrators generally come with fruit leather sheets. 
  6. Spread the Fruit Puree: Pour the fruit mixture onto the prepared sheet and spread it out into a thin layer, about 1/8 to 1/4 inch thick. Try to make the an even layer as possible for uniform drying.
  7. Dry the Pineapple Puree: Place the baking sheet in the oven or dehydrator. The drying process can take anywhere from 6-8 hours in an oven or 8-12 hours in a dehydrator. The exact time will depend on the thickness of the puree and the humidity. The fruit leather is done when it is no longer sticky to the touch and has a smooth, leather-like texture.
  8. Cool and Peel: Once the fruit leather is fully dried, remove the sheet of fruit leather from the oven or dehydrator and let it cool. Gently peel the fruit leather off the parchment paper or silicone mat.
  9. Cut and Store: Use scissors or a pizza cutter to cut the fruit leather into long strips or shapes of your choice. Roll the strips in wax paper or parchment paper for storage. Store the fruit leather in an airtight container in a cool, dry place. It should last for several weeks.
