- 10–12 lbs apples cored and quartered
- Granulated sugar optional, 1/4 cup per quart
- Water for steam juicer reservoir
Fill your water bath canner halfway with water and begin heating. Wash jars and keep them warm.
Wash and core the apples. Leave the peels on for extra flavour and colour. Quarter large apples.
Fill the steam juicer water reservoir according to manufacturer directions. Load cored apples into the steamer basket, filling no more than two-thirds full.
Cover and steam over medium-high heat until juice flows freely, 45–60 minutes. Monitor water level in the base and refill as needed.
Strain collected juice through a fine mesh sieve or cheesecloth for the clearest results.
If sweetening, add sugar directly to each warm jar: about 1/4 cup per quart or 2 tablespoons per pint.
Pour hot juice into warm jars, leaving 1/4 inch headspace. Wipe rims clean. Apply lids and bands fingertip-tight.
Lower jars into the canner. Make sure they are covered by at least 1 inch of water. Bring to a boil and process for 10 minutes.
Turn off heat and let jars rest in the water for 5 minutes before removing.
Set jars on a towel and leave undisturbed for 12–24 hours. Check seals before storing.
- Do not overfill the steam juicer basket. Steam needs room to circulate.
- Sugar is added to individual jars, not the juice, so each jar can be customised.
- For elevations above 1,000 feet, process for 15 minutes (1,001–6,000 ft) or 20 minutes (above 6,000 ft).
- Unsealed jars should go straight into the fridge and be used within 2 weeks.
