This weekend is Ryan’s 37th birthday and we celebrated with some delicious chili and his favourite No-Bake Cherry Cheesecake. I myself am not the biggest cherry cheesecake fan, but this no-bake recipe is super easy and delicious. I was able to complete it in less than one hour the night before (it needs at least 8 hours to chill) and top it off with cherry filling the next day, in time for his birthday dessert.

You don’t have to be a professional baker to make this no-bake cherry cheesecake either. I am not by no means a great baker. I have my limits, and it usually involves a recipe that can look appealing with a “rustic” or “artisan” look.

This recipe is perfect for birthdays, spring dinner parties, and even a weekend treat for the family.

No-Bake Cherry Cheesecake

No-Bake Cherry Cheesecake

Yield: 12 slices
Prep Time: 20 minutes
Cook Time: 8 hours
Additional Time: 5 minutes
Total Time: 8 hours 25 minutes

Ingredients

Graham Cracker Crust

  • 2 1/2 cups graham cracker crumbs
  • 1 cup unsalted butter, melted
  • 1/2 cup granulated sugar

Cream Cheese Filling

  • 2 packs of Dream Whip
  • 1 cup milk
  • 2 bricks softened cream cheese
  • 1 tbsp vanilla

Topping

  • 1 can cherry filling

Instructions

  1. Combine all crust ingredients in a medium bowl until it reflects a wet sand texture.
  2. In a spring baking pan press the crust mixture firming down to form a solid crust.
  3. Place pan in fridge while you continue to the cream cheese filling.
  4. Combine milk and Dream Whip in a stand mixer and whip until fluffy. Add in vanilla and pieces of cream cheese slowly.
  5. Once combined with no chunks remove pan from fridge and fold cream cheese mixture over the crust.
  6. Place in fridge overnight to harden.
  7. Just before serving, pop harden crust and filling from the pan and serve on cake stand or plate. Drizzle cherry filling over cream cheese filling.
